About us

We source real traditional salumi made by hand, not machine, the way Italians intended it to be. Traditionally made local and imported cheeses, our own hand crafted dips, antipasti and fresh panini are our specialty. Only food handmade, ethically-raised or farm-fresh makes its from our door to yours. We are the all-occasion specialists! We bring our point-of-difference to your weddings, birthdays, engagement proposals, welcoming baby and gifts....our grazing tables, crates and boxes are an 'artwork of food' for all special moments in yours and your loved ones lives.

The team

Shane Pavan - The Salted Pig Salumeria 'Cure-ater'

My earliest of memories was standing on my tippy toes in front of fridge trying to get my most-beloved salame. "Is that you in the fridge again Shane," my parents would shout out when they heard the fridge creak. The love affair with cured meats still reigns strong to this day which has inspired me to embark on a journey of rediscovery of my family's traditions and love of all things Italian. Now living in Sydney, its hard to believe just a generation ago my dad and uncle as young boys on my Nonno's and Nonna's farm on the Northern Rivers of NSW, would help prepare the family pig at dusk in preparation for that season's salumi. Stories of hand milked cows, churned homemade butters, exploding homemade ginger ale and the freshest-of-fresh homemade gelato, all made with love, by my Nonna and Aunty who is now the guardian of the family's recipe book. These are the stories that I hope to re-create with my young family. I hope, by sharing this journey with you, that you and your loved ones can experience this not just as our costumer but as a part of The Salted Pig Salumeria family. Holding strong ties and close communication with suppliers is paramount, which enables us to know our products well and how they are sourced and how everything we use is sustainable, farm-fresh or ethically raised - all words that unfortunately have to be used in this day-and-age to know that what you are eating is closest to its purest state. I hope one day we can all just call it food. A big shout out goes to all the farmers and producers who are keeping traditions alive and who are thinking about future generations. Thank you.

Susan Pavan - The Salted Pig Salumeria Artisan Scout and Stylist

From our first date Shane introduced me to a world of flavour....Sauces made from scratch, salame made by hand, fresh homemade sausages. We fell in love over food. I just finished my masters in journalism before having our first daughter and almost straight after her birth the supermarkets, butchers and delis became my field. I'd put my HD investigative skills into every label, reading up on numbers found on fruit stickers, trying to locate where the wheat was from, the pig's actual farm... I wanted to know what my family was eating. Still it was hard to find the food source in most products. We found with local artisanal foods, DOP Italian imports and farmer's markets, you can pretty much trace back every ingredient. They cost a little bit more but we started eating less quantities (yes trust me real food is actually filling). Instead of walking out of a shoe shop with new winter boots, it all went to our food budget. The food tasted like heaven and were nutrient dense. Then we came to a cross-roads in life and The Salted Pig Salumeria was born. With magazine styling background we started photographing our own grazing tables and started 'cure-ating' for our friend's events overnight. Next we look forward to finding the perfect shop - our SALUMERIA - so everyone can taste our handmade salame, home-made antipasti and dips, baked ricotta cakes...everyday.
